Chicken Lo Mein w/ Spaghetti Squash

In a previous recipe, I stated I loved Fried Rice, but lets face it I love Chinese food! And again, it is not the best food for you so I always try to make it healthier and I created a Lo Mein where you used Spaghetti Squash instead of Noodles.

Ingredients:

1 Medium Spaghetti squash
Half of Package of Schwans Asian Style Vegetable Stir Fry (Here is the Link:  http://www.schwans.com/products/product?id=60425&c1=10427). If you don't have Schwans in the area; any kind of Asian Style vegetables will do. I used Schwans' because it is easy and I love the seasoning that comes with it.
1- Chicken Breast, fully cooked or your favorite protein; shrimp would probably be very good in this.

Directions:
1. Preheat the oven to 350. Take you spaghetti Squash and clean the outside of it, keep it whole and poke several fork holes through the squash.

2. Once the oven is preheated; place the spaghetti squash in a baking dish and place it in the preheated oven; uncovered. Bake the spaghetti squash…

Spaghetti Squash

I tried Spaghetti Squash several years ago and I must have over cooked it because it just was NOT good! This year, I decided to give it another try because the Farmers Market had them at the end of summer and my co-worker lives near a farmer who was selling them as well for very cheap.  I must say, I am in LOVE with spaghetti squash for a while I was making it at least 3 or 4 times a week.


Here is my own recipe for Spaghetti Squash:
Ingredients:

1- Medium Spaghetti Squash; Clean and keep whole
1 Tablespoon Olive Oil
2 Gloves of Garlic or more...I LOVE Garlic
1/2 Cup of Chopped onion
Your Favorite Vegetables; chopped
      Some of my favorite vegetables to add are:
                 Zucchini, Peppers, Yellow Squash, Carrots
Your Favorite Protein; Cut in tubes
        Some of my favorite Proteins:
                   Shrimp, Chicken, Ground Beef, Ground Turkey
Your Favorite Sauce
        I have used the following:
                  Alfredo Sauce, Pesto, Red Sauce

Simple Fried Rice

I LOVE LOVE LOVE LOVE Fried Rice, but as you know Fried rice is not the greatest for you! This year I was weight watchers and I came across this recipe and every time I am craving some Fried Rice and can't afford to buy it or I am trying to eat healthy...I make this delicious recipe.
Ingredients: 2 sprays cooking spray 2 large eggs, lightly beaten 1 cups uncooked carrots, shredded; I didn't shred my carrots, but I like my carrots crispy and not chewy. 1 cups uncooked scallions, sliced, divided: I used an onion 3 cups cooked white rice or brown rice  1/2 cups frozen green peas, thawed 1/4 cups low sodium soy sauce or to taste: I believe i used less than this. 1/4 cup seemed like a lot. I also added Water Chestnuts because those are my favorite. You also could add your favorite protein; but with the added protein, the WW Points will be more than 4 points. Gingered Spaghetti Salad

One of my favorite things about summer is the farmers market! I mean, who doesn't love Fresh vegetables? I know I sure do! This recipe is so refreshing for a hot summer day! IT bright and colorful and sooooo simple to make. Great for BBQ Side or to eat for a lunch.

Gingered Spaghetti Salad:

Ingredients1 package (16 ounces) whole wheat spaghetti1 cup frozen shelled edamame: I used sugar Snap Peas instead.1 teaspoon minced fresh gingerroot1 cup reduced-fat sesame ginger salad dressing3 cups cubed cooked chicken breast; I didn't have any chicken and it still was delicious1 English cucumber, chopped1 medium sweet red pepper, chopped1 small sweet yellow pepper, chopped1 small red onion, finely chopped3 green onions, slicedAdded the following vegetables:1 medium Zucchini, choppedDirections:1. Cranberry Salsa

For Thanksgiving, I don't really like Cranberry sauce, especially the stuff in the can! YUCK! So I researched other forms of cranberry sauce and I came across Cranberry Salsa. I have made this for the last two Thanksgivings and it is so delicious!!!! You are supposed to eat with chips, but I put it on my turkey and then for left overs it is really good on a Turkey sandwich. 
Ingredients: 1 (12 ounce) bag cranberries, fresh or frozen: I used Fresh 1 bunch Cilantro, chopped 1 bunch green onions, cut into 3 inch lengths 1 jalapeno pepper, seeded and minced: I used 2 or 3 2 Limes, juiced 3/4 Cup White Sugar 1 pinch salt
Directions: 1. Combine cranberries, cilantro, green onions, jalapeƱo pepper, lime juice, sugar and salt in the bowl of a food processor fitted with a medium blade. Chop to medium consistency. Refrigerate if not using immediately. Serve at room temperature.

Hot Pretzel Bites

Hello again! I took 2016 off of all Social Media and that included Blogging! But I decided to blog again because I missed sharing all my wonderful recipes I have created or found the web. I hope you enjoy the new recipes I found/created. I have discovered new loves for me and the recipes I tried this year were AMAZING!

I am starting off with the Hot PRetzel Bite recipe I found online. Let me tell you, I LOVE soft pretzels, but personally 4-5 dollars for a pretzel is getting too expensive, so I went digging for a easy and cheap way to make pretzels. Well, of course I found a recipe online. This recipe is original from Betty Crocker and it does not disappoint!

I just made these tonight for an office party tomorrow and OMG AMAZING! I also have to make these for Christmas Day!
