1 Ib Red potatoes, washed and quartered
1 Tablespoon Olive Oil
1/2 Cup Italian Style Panko Crumbs (I didn't use Panko and they still tasted good)
1/2 Cup Freshly grated Parmesan Cheese
1. Preheat oven to 425 (I did mine at 400) degrees. Line a baking sheet with aluminum foil and spray it with non stick spray.
2. Put potatoes on the baking sheet. Drizzle with olive oil and then mix them around until they are evenly coated.
3. Sprinkle pano crumbs and cheese on top.
4. Bake 30-40 minutes, mixing once, until potatoes are done and fork tender. I think I baked mine closer to 45-50 minutes, but they were on a lower temperature.
