Crispy Parmesan Potatoes

I always enjoy making new potatoes recipes; these were easy and pretty good, my family enjoyed them more than me, but I am not much of a potato fan.

1 Ib Red potatoes, washed and quartered
1 Tablespoon Olive Oil
1/2 Cup Italian Style Panko Crumbs (I didn't use Panko and they still tasted good)
1/2 Cup Freshly grated Parmesan Cheese


1. Preheat oven to 425 (I did mine at 400) degrees. Line a baking sheet with aluminum foil and spray it with non stick spray.

2. Put potatoes on the baking sheet. Drizzle with olive oil and then mix them around until they are evenly coated.

3. Sprinkle pano crumbs and cheese on top.

4. Bake 30-40 minutes, mixing once, until potatoes are done and fork tender. I think I baked mine closer to 45-50 minutes, but they were on a lower temperature.


Honey BBQ Baked Chicken Tenders

I am very much LOVE Chicken tenders, but as you all know fried items are not good for you; so when a family friend posted a link to these Honey BBQ Baked Chicken Tenders, I made sure to make them that week.

These are definitely a keeper---so delicious and they will be great for Packers Parties as well.

1 and 1/2 pounds chicken tenders
1 cup Your Favorite BBQ Sauce (I made my own)
1/4 Cup Honey (I used just a bit more)
1/2 Cup Flour
1/2 Teaspoon Salt
1/2 Teaspoon Black Pepper
1/2 Teaspoon Cajon ( I didn't put this in, but will when I make them for myself)
2 Large Eggs
1 and 1/2 Cup Bread Crumbs (I added some Italian Seasoning to my Bread Crumbs)
Nonstick spray like pam or olive oil spray
Olive Oil for the Pan  (I used Pam--worked just as well).

Slow Cooker Cinnamon Pecans

My mom recently broke her ankle and is not able to put any pressure on it for 6 weeks. And so I wanted to do something nice for her at least once of week, one week I bought her flowers and this week I made her Cinnamon Pecans. You know those pecans or almonds that you smell cooking at the mall or the fair or the baseball stadium? Yep, these tasted exactly like those, my family couldn't stop eating them. I had to hide them.

1 Cup Sugar
1 Cup Brown Sugar
3 Tablespoon Cinnamon ( I added a little more because I love Cinnamon)
1/2 Teaspoon Salt
1 Egg White
2 Teaspoon Vanilla
3 Cups Pecans
1/4 Cup Water

How to Make them:
1. Mix together in a large bowl sugars, cinnamon, and salt

2. In another bowl with a whisk, mix together the egg white and vanilla until it is frothy. Add the Pecans and coat throughly with egg/vanilla mixture. This will help the mixture stick to the pecans during the cooking process.

Turkey Burgers

7 oz. plain greek yogurt
1 medium fresh lemon
¼ tsp minced garlic
¼ tsp dried dill
1.25 lb. ground turkey
6 halves sun dried tomatoes
1 medium red onion
2 oz. frozen spinach
¼ cup crumbled feta
1 tsp dried oregano
½ tsp minced garlic
⅓ cup bread crumbs
1 lg. egg
1 med. cucumber
6 hamburger buns
to taste salt and pepper

Prepare the yogurt sauce by combining the yogurt, ¼ tsp minced garlic, dry dill, juice of half the lemon and a dash of salt. Stir everything to combine and then refrigerate to allow the flavors to blend while you make the burgers.
Thaw the frozen spinach and squeeze out as much moisture as possible. Roughly chop the spinach to prevent long stringy pieces. Also chop the sun dried tomatoes and ¼ of the red onion.
In a bowl combine the ground turkey with the spinach, sun dried tomatoes, red onion, feta, ½ tsp minced garlic, dried oregano, egg, bread crumbs, ½ tsp of salt and some freshly ground pepper. Stir everything until it is evenly combined. Shape the mixture i…

Bean Salsa Dip

I received this recipe from a family friend. Great for family gatherings and parties!

Drain rinse and mix items below
All items are 15oz cans

1 can black eyed peas
1 can pinto beans
1 can black beans
1 can white shopped corn

1 jar pimentos, diced and drained
1 medium onion, diced
1 cup celery diced
1 large green yellow, red and orange pepper diced

Bring to a boil:
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon water
3/4 cup cider vinegar
1/2 cup vegetable oil
1 cup sugar

Refrigerate over night and drain before serving.

Serve with scoops



When we have an Italian themed meal for a Packers game we are always trying to figure out kind of appetizers to make besides Mozzarella sticks and cheese and sausage. So I have decided to make Bruschetta and oh boy it definitely is a keeper.


4 Plum Tomatoes; Seeded and chopped
1/2 cup shredded Parmesan cheese
1/4 minced fresh basil
2 tablespoons minced fresh parsley
3 garlic gloves, minced
2 tablespoons balsamic vinegar
8 ounces fresh mozzarella cheese, cubed
1 french baguette, cut 1/2 inch slices


DirectionsIn a small bowl, combine the first 9 ingredients. Spread baguette slices with butter; top each with a cheese slice. Place on ungreased baking sheets. Broil 3-4 in. from the heat for 3-5 minutes With a slotted spoon, top each slice with about 1 tablespoon tomato mixture.Yield: 3 dozen.Original Recipe from Taste of Home

Stuffed Pepper with Chicken Salad

Sometimes I am craving Chicken Salad, but I don't want it on a roll or on toast. So I was trying to think what could put it in; I have tried salad, which is good or i have just eaten it. So then someone suggested to me that I clean out a paper and place the chicken salad in a pepper. I have to say, I don't eat my chicken salad any other anymore. It was delicious and easy!


1- Rotisserie Chicken- remove skin and shred the white meat
4 Tablespoons of May-O
2 Tablespoons of yellow mustard
1- Small Red Onion; chopped
1- Medium Carrot; shredded
1- Stalk Celery; chopped
3 or 4 pickles- chopped (optional)
1- large Red, green, yellow or orange Bell Pepper ( I Prefer Red)


1.  Remove all the skin from the rotisserie chicken and remove the chicken from the bone. Once all the white meat is pulled off, shred the chicken meat.  Set aside.

Freezer Meal: Breakfast Burritos

2 LBs breakfast Sausage 1 Large Onion, diced small 1 Cup diced bell peppers 1 Cup diced Red Peppers 20 eggs 36 Fajita sized flour tortillas 1 package shredded cheddar cheese
Directions: 1. In a large skillet cook the sausage until browned. Drain grease from sausage and set aside on a plate with a few paper towels to absorb the grease. 
2. Using the same skillet saute the onion and bell peppers till the onion is translucent and the peppers are soft yet a little crisp. 
3. While the onion and bell peppers are cooking, crack and scramble the eggs. For large quantities of eggs like this, I like to scramble them in my blender.
4. Once the bell peppers and onions are cooked add the eggs and cook just as you would for scrambled eggs, stirring the egg mixture while cooking until they are cooked through, being careful not to over the cook the eggs. Then add the cooked sausage to the eggs.

Quick Beef Stroganoff


6 1/2 cups water, divided
4 ounces uncooked egg noodles
1 pound flank steak, trimmed (or any kind of steak you would like)
1 Medium Onion, sliced
Cooking Spray
1/2 Teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/4 teaspoon paprika
6 ounces mushrooms
1 cup low-sodium beef brother, divided
5 teaspoons all purpose flour
1/3 cup fat-free sour cream
3 tablespoons thinly sliced green onions
1 tablespoon butter
2 tablespoons chopped fresh flat-leaf parsley


1. Bring 6 cups water to  boil in a large saucepan. Add noodles; cook 5 minutes or until al dente. Drain.

2. Cut Beef across the grain into 1/4 inch wide strips; cut strips into 2 inch pieces. Cut Onion 1/4 wide strips.

3. Heat  a large skillet over medium-hight heat. Coat pan with cooking spray. Add beef to pan, saute 4 minutes or until browned. Remove beef from Add onion, black pepper, salt, paprika, and mushrooms to pan; saute 4 minutes or until tender. Reduce heat to medium.

Hidden Valley Oyster Crackers

This recipe is great and kids will love to help you and enjoy the snack when it is done, it also a recipe I use for the holidays.  INGREDIENTS1 1-oz. packet Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix ¼ cup vegetable oil 2½ tablespoons freshly chopped dill (or 1 teaspoon dried)¼ teaspoon lemon pepper and/or garlic powder, (optional)1 16-oz. box oyster crackers  DIRECTIONSPreheat the oven to 250°F. In a small bowl, add the oil, Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix, dill, and lemon pepper and/or garlic powder. Stir until mixed through. In a 1-gallon-size Glad® Zipper Bag, add the crackers and oil mixture. Seal the bag and toss until well-coated. Arrange the crackers on an ungreased half-sheet pan in a single layer. Bake the crackers for 15 to 20 minutes or until golden.

Crispix Mix® Original with a Griffith Twist

My family and I love to make Crispix mix for the holidays and when we go on vacation, but as the years have gone on we have perfected it to be a family favorite with our friends.

The Recipe below is the original Crispix Mix with a Griffith Twist


Box of Crispix (Crispix Mix Original)
1 cup peanuts (Crispix Mix Original)
1 cup pretzels (Crispix Mix Original)
1 cup Cheerios
1 cup Cheez-its
1 cup Fish Crackers (your favorite flavor)
1 cup of Ritz Crackers- toasted chips
4 Tabelspoons Butter, melted.
4 teaspoons Worcestershire sauce
2 teaspoons lemon juice
1/4 teaspoon garlic salt

Step 1: Pre-heat oven to 250*F, once the oven is pre-heated place the butter in 12x9x2 inch baking pan and place in the oven and let the butter melt; takes about 2-3 minutes.

Step 2: Once the butter is melted, take the pan out of the oven and mix together the Worcestershire sauce, lemon juice and garlic salt and mix it with the butter, mix well.

Football Field Apptizer

Just like most of the country, my family loves Football! Let me rephrase that, my family LOVES the Green Bay Packers; every Sunday we have the family over for a Packer Party. We try to make new recipes for each game. This past season, we tried new recipes that didn't work and some new recipes that did work. For a Mexican themed meal, I decided to make a football field appetizer made out of Salsa, Guacamole, Queso. It was very easy to make and it fit perfectly with the theme.
Below are the directions on how to make the Guacamole and the queso, I bought already made salsa, but probably next time would probably make a Pico to go with it.

Ingredients for the Guacamole:

4 Ripped Avocados
1 Small-Medium Tomato, chopped
1 Small red Onion, chopped
Cilantro (Optional)
