Crayon Making

This is a great activity during the winter or rainy day. Nice way to spend some time with your family, while making fun things to have to color with.

1. Gather all up all your old crayons..doesn't matter how big or small they are. Take a knife- kitchen knife or an exact o knife and cut off the paper. Toss the paper and put the crayon in a bowl. Pre-heat oven to 230 Degrees
2. Once you have taken off all the paper off all the crayons...put that crayons in a plastic bag- sandwich bag and take a hammer and slightly start mashing the crayons. You don't want them completely still want the crayons in different sizes.
3. Grab a silicone mold...right now because of Easter I bought a bunny shaped one. and start filling each one of them up...with lots of the top.
4. Once you have done that, put them in the oven for 15 minutes. I would put them mold on another baking sheet, just in case they spill or something.

Sloppy Joes

***This recipe is from a old Family Friend
Sloppy Joes
1-1/2 lbs. ground beef (friend and drained)
1 medium onion- chopped
1 can tomato soup (undiluted)
1/2 cup ketchup
1 tsp mustard
1-1/2 tsp sugar
1 tsp salt
1 tsp pepper
2/3 cups of red pepper, green pepper, celery- chopped

1. Fry and drain ground beef- in large pan with meat, add all ingredients, EXCEPT Chopped vegetables. Mix together. Mix chopped vegetables together and microwave until veggies are tender. When tender, mix with meat mixture

Mac and Cheese Muffins

Mac and Cheese Muffins
Servings: 12
Prep- 15 mins
Cook- 40 mins
Ready- 55 mins.

2 cups uncooked elbow macaroni
1 tablespoon butter
1 egg, beaten
1 cup milk
1-1/2 cups shredded sharp cheddar cheese
1-1/2 cups shredded mozzarella cheese
1/2 cup seasoned dry bread crumbs
2 teaspoons olive oil
1/2 teaspoon salt

1. Preheat the oven to 350 degrees. Grease a muffin tin with nonstick cooking spray. In a small bowl, stir together the bread crumbs, olive oil and salt; set aside.
2. Bring a large pot of lightly salted water to a boil. Add the macaroni and cook for about 8 minutes. It should still be a little bit firm. Remove from the heat, drain and return to the pan; stir in the butter and egg until pasta is evenly coated. Reserve 1/2 cup of sharp cheddar cheese and stir the remaining Cheddar Cheese, milk and mozzarella cheese into the pasta. Spoon into the prepared muffin tin. Sprinkle the reserved cheese and the bread crumb mixture over the tops.

Baked Mozzarella Sticks

12 sticks of string cheese in your choice of cheese, go for the low sodium kind if you want to be extra healthy.
1 egg
5 tbsp of flour
8 tbsp of bread crumbs
4 tbsp of Parmesan cheese
1 teaspoon of Italian Herb
Cooking spray

1. Cut the cheese sticks in half, making 24 slices, then freeze the slices in the freezer until completely frozen.
2. Beat the egg in a small bowl. Use a separate bowl to combine the bread crumbs and Parmesan cheese and Italian Herb.
3. To bread the cheese sticks: first dip the frozen cheese stick into the flower, then into the egg, then into the bread crumb mixture.
4. Once all the 24 sticks are coated, place them on a baking sheet covered with foil coated with cooking spray.
5. Bake in the oven at 400 degrees for about 5 mins. and then flip them and put them back in the oven and bake 2-4 mins. They need to be watched closely so they don't melt completely.

Cheeseburger Pizza

3/4 Pound of Ground Beef
1(12 inch) prepared pizza crust
1/2 of tablespoon of yellow mustard
1/2 cup of ketchup and drizzle some
1-1/2 cups shredded Mozzarella cheese
1/2 cup chopped onions
20 dill pickle slices
1-1/2 cups shredded Cheddar cheese

1. Preheat oven to 425 degrees. Cook the ground beef in medium skillet until browned; drain well and place in bowl and pat with paper towel. Mix the the 1/2 cup of ketchup and the mustard together.
2. Place pizza dough on lightly grease 12 inch pizza pan or baking sheet. Spread the ketchup and mustard mixture on the pizza dough and do the following layers:
*Mozzarella cheese *Ground Beef *Cheddar Cheese *Onions *Pickles.
3. Bake 14 minutes or until crust is cooked through and cheese is bubbly. Wait a few minutes and drizzle ketchup on top.
4. Cut into thin squares and serve hot. Refrigerate leftovers.

Italian Wedding Soup

Italian Wedding Soup
Servings: 8

Meatballs: 1 small onion, grated, parsley, 1 large egg, 1 tea minced garlic, 1 slice fresh white bread, torn into tiny pieces- no crusts, 1/2 cup parm cheese, 1 pound ground beef, black pepper.
1. Blend all ingredients together. Roll into 1 inch meatballs. Place on baking sheet, bake in a 350 oven for 20 minutes.

Chicken Soup: boil chicken breast (1-1/2 pounds) in 4 cups of water along with one diced onion. Cook thoroughly- about 20 minutes. Remove chicken from water. When cool enough to handle, dice chicken and return to water. Add eight cups of chicken brother, carrots, celery, etc. may be added if desired. Bring broth to boil- add 1 pound curly endive or escarole- coarsely chopped to pot. Cook about 10 minutes. Whisk together 2 large eggs and 2 tablespoons, Parm cheese, stir the soup in a circular motion. Gradually drizzle the egg mixture into the moving broth, stirring gently with a fork to form thin strands of egg, about one minute. Season the soup t…

Kaboodle Casserole- A Griffith Twist

Kaboodle Casserole
Serving: Depending on how many you are feeding, but this will recipe with serve about 7-8

1/2 pound of ground beef- cooked/drained
half of a onion- chopped
28oz can of Puree Tomatoes
5-10 slices of American Cheese
4 cups of Elbow Macaroni- cooked
Italian Herb Seasoning

1. Cook the ground beef with the onions in a pan, make sure the beef is fully cooked all the way through. Once the beef is cooked, drain and set aside.
2. Put a pot of a water on the stove and let it boil and cook the noodles via directions on the box. Drain and set aside.
3. Take the beef and the can of puree tomatoes in a pan and let it simmer together for about half hour with the Italian Herb seasoning.
4. After a half and hour take the cooked noodles and place them with the beef and tomatoes...cook on about 2 or 3...stirring occasionally and let it simmer for another 20-30 minutes.

Servings: 6-8 Prep Time: 10 minutes (including refrigeration of pork, up to 24 hrs.) Cook Time: 4-5 hours Ingredients: For the Spice Rub:1/4 cup paprika1/4 cup salt1/4 cup brown sugar2 tablespoons garlic powder3 tablespoons chili powder1/2 teaspoon cayenne1 tablespoon black pepper1 tablespoon oregano1/2 teaspoon celery seed1 1/2 teaspoon allspice1 teaspoon ground coriander For the Pork:1 (4 to 5 pound) bone-in pork roast, preferably shoulder or Boston butt1 cup water1/2 cup white or apple cider vinegar1 tablespoon brown sugar8 Hamburger BunsBBQ Sauce, if desiredColeslaw, if desired Directions: For the Spice Rub:In a bowl, combine the paprika, salt, brown sugar, garlic powder, chili powder, black pepper, cayenne, oregano, celery seeds, allspice, and coriander. Spinach Calzones

Spinach Calzones:
Serves: 5

3-10 ounces frozen spinach, cooked and drained
2/3 cup ricotta cheese
2/3 cup shredded mozzarella cheese
1 Table Parmesan cheese
1 Table basil
1/4 tea oregano
1/8 tea pepper
1LB Pizza Dough
5 Table Flour
1 egg white

1. Preheat oven to 375
2. Spray baking sheet with cooking spray. In a large bowl, mix cheeses, spinach, basil, oregano, and pepper.
3. Divide bread dough into 5 equal pieces. Roll each into 5-6 inch circle. Place 1/5 of the spinach filling over half of each circle.
4. Fold dough over- use a bit of water to pinch and stick edges together- brush with egg white.
5. Bake until golden and puffed, 20-25 mins.
Serve with Spaghetti Sauce.

Crock Pot Minestrone Soup

Crock Pot Minestrone Soup
Servings 6+

1/2 onion, chopped
1 cup carrots, chopped
1 celery stalk, chopped
2 garlic cloves, minced
1 (28oz) can diced tomatoes
1 (15 oz) can white beans, drained, rinsed
3 cups fat free chicken brother or vegetable broth
1 oz chunk of good Parmesan cheese rind
1 fresh rosemary sprig
2 bay leaves
2 tablespoon chopped fresh basil
1/4 cup chopped fresh Italian parsley leaves
salt and fresh pepper
1 medium zucchini, chopped
2 cups chopped fresh or frozen (defrosted) spinach
2 cups cooked small pasta like ditalini or elbows (al dente)
extra Parmesan cheese to top

1. Rinse and drain beans. Puree beans with 1 cup of the broth in a blender...I DID NOT DO THIS STEP and the beans were perfectly fine whole.
2. In a crock pot, combine brother, tomatoes, beans, carrots, celery, onion, garlic, herbs, Parmesan cheese rind, salt and pepper. Cover and cook on low for 6 to 8 hours.
3. Forty minutes before the soup is done cooking, add zucchini and spin…

Baked Chicken Chimichangas

Baked Chicken Chimichangas
Servings 6
Prep: 20 min. Bake: 20 min.

1-1/2 cups cubed cooked chicken breast
1-1/2 cups picante sauce, divided
1/2 cup shredded reduced fat cheddar cheese
2/3 cups chopped green onions, divided
1 teaspoon ground cumin
1 teaspoon dried oregano
6 flour tortillas (8inches), warmed
1 tablespoon butter, melted

1. In a small bowl, combine the chicken, 3/4 cup picante sauce, cheese, 1/4 cup onions, cumin and oregano. Spoon 1/2 cup mixture down the center of each tortilla. Fold sides and ends over filling and roll up. Place seam side down in a 15 inch. x 10 in. x 1 in. baking pan coated with cooking spray. Brush with butter.
2. Bake, uncovered, at 375 for 20-25 minutes or until heated through. Top with remaining picante sauce and onions.

Suggestions: I used a rotisserie chicken, which worked GREAT!!!  Much easier than getting chicken breasts and cooking them. I also forgot the green onions, so I just used regular onions and still turned awesome.

Tasty Rubens
Serves- 10 (1 sandwich per person, with PLENTY of left overs)

1 lb. of Corned Beef (we used Boar's Head brand)
Loaf of seedless Rye Bread
Cheese(whatever you prefer)
sauerkraut (Optional)
Thousand Island Dressing (Optional)

1. Take a pan and place it on the stove and put the stove on 5 and the let the pan heat up for about 5 minutes.
2. While the pan is warming up...butter up each piece of bread...depends on how many people you are cooking for.  Once the pan is warm..take the butter bread..depending on your pan butter side down bread and start placing 2 or 3 pieces of corned beef and then a place of cheese...then take another piece of butter bread on top.
3. Cook each side about 5-7 minutes...depending on how well down you like your bread or until the cheese is melted.
4. Take off the pan and repeat for as many sandwiches as you need. Serve immediately.

A Lazy Day for a lazy Polar Bear

WHAT AN AMAZING DAY OF WEATHER FOR ALL YOU WISCONSIN BLOGGERS!!! Because the weather was so awesome, myself, my mom, my sister, and my niece and nephew all went to the zoo this morning. And boy it was fun!!!!

As we walked, we got to one of my favorite animals, the Polar Bear and he was sleeping out in the sun!! He was so adorable!

I hope everyone gets to enjoy this beautiful weather and gets to spend time with their loved ones.

Breaded Chicken

Breaded Chicken
Servings: Depends on how many you want to make.- This recipes served 4

3- Chicken Breasts- pounded thin
3 eggs-cracked and stirred
Bread crumbs
1. Take one of the chicken breasts and put plastic wrap over it and pound it with a pounded until it is thin. Repeat with each chicken breast.
2. Once all the chicken breasts are completed...first coat them with the flour, then the eggs and then coat them with the bread crumbs. Set aside on a plate and repeat with each chicken breast.
3. Once you have completed step 2...take a frying pan and place a half of cup of oil in it...make sure the pan is nice and hot before putting the chicken in. Once the oil is hot the chicken in the frying pan and turn the pan down to about 5 or 6 and cook about 3-4 mins on each side. Put the chicken on a plate and pat them with a paper towel to make sure they are not greasy anymore.

Very Easy Quiche for Supper

Broccoli and Bacon Quiche
1- already made Pie Crust (You can find them at any grocery store)

10 slices bacon, fried to crisp then crumbled 1 c. frozen broccoli, cooked and chopped 2 c. sharp cheddar cheese (8oz) 4 lg. eggs 2 c. half and half ¾ tsp salt 1/8 tsp. pepper

1. Heat oven to 425 degrees. Sprinkle bacon, cheese and broccoli in unbaked pie crust. Beat eggs slightly. Beat in remaining ingredients. Pour mixture in pie. Bake 15 minutes. Reduce heat to 300 degrees and bake 30 minutes longer or until done.

Mushroom and Bacon Quiche:
1 c. shredded Cheddar cheese
1 c. sliced mushrooms
1 c. cooked, crumbled bacon
1/4 c. grated Parmesan cheese
1/4 c. minced onion
1 c. shredded Swiss cheese
1 frozen deep dish pie shell, thawed
5 eggs
1 c. half & half
1/2 tsp. white pepper

Rain drops

As Spring approaches so does lots and lots of rain. Which I do not like, but I do have to say...I LOVE dancing and singing in the rain. I know what you are thinking you are 24 years old and you are dancing and singing in the rain???? Grow up right? And I would respond...HELL NO! Sometimes you have to have some fun and be a child again.

Just remember, you are never to old to be young again, even if that means dancing and singing in the rain. :)

For all you Potato Lovers

Crispy Potato Roast
Serves 8

3 tablespoons unsalted butter, melted
3 tablespoons extra-virgin olive oil
4 pounds russet potatoes, peeled
Half of a chopped onions
Coarse Salt/Pepper
Italian Herd Seasoning
Parmesan Cheese

1. Pre-heat oven to 375 degrees. In a small bowl, combine butter and oil. Brush bottom of a round 9 inch baking dish with some butter mixture. With a shark knife or mandoline, slice potatoes very thinly crosswise.
2. Arrange potatoes slices horizontally in dish. Sprinkle onions throughout. Sprinkle with salt and pepper; brush with remaining butter mixture. Bake for one hour and then add thyme and bake until potatoes are cooked through with a crisp top, about 35 minutes more.
3. Sprinkle with Parmesan cheese and put back in the oven with the oven off to let the cheese melt and to keep it warm and serve when ready to eat.

It is Lent Time-NO Meat Friday

Tuna Casserole:
Serves 3-4

2 cans of Tuna
1- can of Cream of Mushroom Soup
1- Half bag of peas- Thawed
2-3 Cups of Egg Noodles
Small bag of Potato Chips
Cheddar Cheese

1. Boil some salt water for the noodles. As the water is warming, open the two cans of tuna and drain them and rinse them and then make sure you squeeze out the tuna. Put in a bowl and set a side. Pre-heat the oven to 375*
2. Once the water has started to boil put the noodles and cook as it states on the package. Make sure the peas are thawed, if they are not...rinse them for a couple of seconds under hot water.
3. Once the noodles are done, drain the water and rinse the noodles. Then take a circular baking dish and spray it with cooking spray and take the tuna and the cream of mushroom and mix them well together.
4. Once you have done that, add the peas and the noodles and mix well.
5. Then take the cheddar cheese and sprinkle on top and top it off with potato chips.

Grilled Buffalo Chicken Wrap

Grilled Buffalo Chicken Wrap:
Serves: 2
1- chicken breast-follow the GBC Recipe
1- Spinach Wrap
Green Onions
Honey Mustard
(Any other vegetables you like in a wrap...that is just what I had in the house)

Grilled Buffalo Chicken Recipe:
3/4 cup hot sauce (such as Crystal)
1/4 cup butter, melted
2 teaspoons Worcestershire sauce
1/2 teaspoon onion powder
4 (6-ounce) skinless, boneless chicken breast halves
Cooking spray
1/4 teaspoon salt
Light ranch dressing (optional)
Combine hot sauce, melted butter, Worcestershire sauce, and onion powder in a bowl. Reserve 1/4 cup hot sauce mixture; pour remaining hot sauce mixture in a zip-top plastic bag. Add chicken breast halves to bag; seal. Marinate at room temperature 20 minutes (don't refrigerate it - the butter will harden). Remove chicken from bag; discard marinade in bag. Sprinkle chicken with salt. Grill chicken until done. Brush reserved marinade over chicken. Serve with light ranch dressing, if desir…

The Best Meatball Sub EVER

Meatball Subs:
Makes 3 Subs

9 meatballs
3 Hot dog buns
Spaghetti Sauce
Mozzarella Cheese

Meatball Recipe: (my mom has a great meatball recipe, but it is a I looked up a recipe that is very similar to hers...minus a few things.)

Spaghetti Sauce Recipe:
3 TBL. Olive oil
2 cloves garlic- crushed
2 TBL Celery- chopped
2- 18oz cans tomato past
2- 18 oz cans water
2 bay leaves
1 TBL. Sweet Basil
1 TBL Oregano
1 TBL Sugar
Salt and Pepper
1. Brown garlic, celery, and onion in olive oil. Add remaining ingredients.
2. Simmer at least 3 hours OR s6 hours in the crock pot.

Meatball Sub Directions:
1. Make sure your meatballs and sauce are completed. Cut the hot dog buns and spread some butter on both sides and sprinkle with some garlic.
2. Put the buns on a bake sheets and  turn on the broiler on low and the butter and garlic melt together for a…
